These days there hasn't been much time for dinner preparation. And, in Oklahoma, there is a very limited selection of Indian cuisine. It's at least a 45 minute drive for us. So, we like to stock up on some Indian Simmering sauces at Williams-Sonoma so that we can have a quick Indian dinner in a pinch. The other night we made the Tamarind Coconut Curry, though my favorite is their Tikka Masala. We just sautee chicken, add the sauce and some frozen peas or green beans, cook up some basmati rice in the rice cooker & we have a delicious dinner in under 20 minutes. I even was able to find some garlic naan at Target in the deli section and we enjoyed our nearly-Indian meal. The best part was the leftovers for lunch the next day! It was in my Pyrex storage container. Didn't I say how they could make even leftovers look good? Of course, curries over rice don't need too much help! Mmmm....
