Beans
prep time: 5 min-8 hours; cooking time: 3-8 hours
- 1 lb dry beans
- 8 cups water or stock
- (Optional pre-step) Rinse beans in water, making sure to pick out any debris, rocks, or bad beans. Place in pot and fill pot halfway with water. Allow to sit 4 hours or overnight. Drain soaking water.
- Add beans water or chicken stock. Add 3 rings of a slice of onion and 1 teaspoon of chicken better-than-buillion or a chicken buillion cube (for authentic Latin American flavor).
- Next take 2-3 cloves of garlic and cut off the ends and remove any green shoot growing inside. Smash the clove with a cup, hammer, or flat side of a knife. Add the smashed cloves of garlic to the slow cooker.
- Cover and cook on low for 6-8 hours (preferred) or on high 3-4 hours if you're tight on time. Overcooked beans will split and lose their shape.
Make sure to remove the cooked onion or garlic before serving! You can use the excess bean liquid in your recipes, unlike using canned beans. (Just to make sure you're forewarned, though, the bean liquid contains more of the gas-causing culprits. Soaking beans overnight and discarding soaking liquid will help cut this down as well as using only the beans instead of the cooking liquid.) When cooked, these beans are delicious on their own or in any recipe in place of canned beans.
